Easy Halloween Dessert – Timbit Spiders

In preparation of our Halloween festivities I was on the hunt for an easy Halloween dessert when I came across these Easy Halloween Eyeball Donut Holes from ThisLilPiglet.net. What a GREAT idea, she uses donut holes (Timbits here in Canada) instead of having to make her own cake pops…brilliant I say!

Following her lead, I went out and grabbed a 40 pack of Timbits from Tim Hortons, some icing and candies to become the BEST Mom ever!

Timbit Spiders – Easy Halloween Dessert

Ingredients:

  • 40 donut holes, no glaze or powder from your favourite donut spot
  • Icing
  • Food colouring of your choice
  • Assorted candies of your choice (string liquorice for legs)
  • Appetizer sticks (we used forks)
  • Toothpicks
  • Cupcake cups
  • Coloured sugar

Preparation:

Put your icing into a bowl and drop in a few drops of food colouring and mix well until you reach your chosen colour. Place your Timbit onto the appetizer stick (or fork) and ice it all around. Pour some coloured sugar into a cupcake cup and the iced Timbit into it, coating it well.

Use the toothpicks to apply the spider’s legs, simply put one end of the toothpick into the liquorice and one end into the Timbit. Put on candy eyes/mouth and you are done!

Peanut Butter Brownie Recipe

Easy recipes are the key to my dessert success, I openly admit that I’m not the most amazing cook but I’ll tell you when I nail it, I nail it! This Peanut Butter Brownie recipe is ridiculously simple and sure to impress anyone you share it with. This past weekend was Thanksgiving here in Canada and my sister generously offered to host 22 of us in her home. I offered to bring a dessert and had planned to make my Cheesecake Cups when my nephew asked for brownies.

Well I’m not one to back down from a challenge so I did what any good net-savvy woman would do and turned to Pinterest. Once again I was drawn to images of Peanut Butter Brownies and so here I am offering you what I ended up developing after trying a few batches (much to the delight of my neighbourhood children samplers).

Peanut Butter Brownie Recipe

Ingredients:

  • 1 box (18-19 oz) Brownie mix
  • 1/4 cup butter, melted
  • 1/2 cup cream cheese, room temperature
  • 1 egg
  • 3/4 cup peanut butter
  • 3/4 cup powdered sugar
  • 3/4 cup chocolate frosting

Preparation:

Preheat your oven to 350° and line a baking sheet with parchment paper.

In a medium bowl combine brownie mix, butter, cream cheese and egg. Mix until dough becomes very thick and sticky and spoon into bottoms of 18 paper-lined muffin pan cups. Place in the oven for 18 minutes. Transfer to wire rack to cool.

In another bowl stir together peanut butter and powdered sugar.

Spoon approximately 1 tablespoon onto the top of each cooled brownie cup, frost and enjoy!

Ingredients:

  • 1 cup  graham cracker crumbs
  • 3/4 cup  plus 2 Tbsp. sugar, divided
  • 3 Tbsp.  butter or margarine, melted
  • 3 pkg.  (8 oz. each) PHILADELPHIA Cream Cheese, softened
  • 1 tsp.  vanilla
  • 3 eggs
  • 1/3 cup strawberry jam
  • 6 strawberries
  • 1/4 cup chocolate syrup

Preparation:

Begin by heating the oven to 325°F.

Mix the graham crumbs, 2 Tbsp. sugar and butter until they are well blended.

Now press the graham cracker mixture onto bottoms of 18 paper-lined muffin pan cups; I found it easy using an ice cream scoop.

Set aside the muffin tins and beat cream cheese, remaining sugar and vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended.

Now pour the cream cheese mixture over crusts in the muffin tins.

Bake 25 to 30 minutes or until centers are almost set, then cool completely.

Spread evenly with 1/3 cup strawberry jam, (I was far too generous and ended up with very messy cheesecake cups), garnish with fresh strawberry halves and drizzle with chocolate sauce.

Ingredients

Apple Maple Pecan Skillet Pancake Recipe

With Autumn in the air here in Ontario it’s the perfect time to head out to the apple orchards and begin some baking. The choices are endless, from apple pies to apple brown betty we love them all! Today I decided to try something different, I wanted to incorporate some good old Maple Syrup and delicious pecans. This Apple Maple Pecan Skillet Pancake recipe can be used for either a breakfast or dessert dish. It’s a lovely breakfast on a Saturday morning or accompanied by some ice cream for dessert.

Apple Maple Pecan Skillet Pancake Recipe

Apple Maple Pecan Skillet Pancake Collage

Ingredients:

  • 3 large eggs
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1 1/4 teaspoon salt
  • 2 tablespoons butter
  • 8 small McIntosh apples peeled, cored, and cut into 1/4-inch slices
  • 1/2 cup brown sugar, split into two portions
  • 1/4 teaspoon cinnamon
  • 1/4 cup Maple Syrup
  • 1/4 cup pecans, broken into small pieces

Preparation:

Begin preheating your oven to 425 degrees.Next peel your apples, coring them and cutting them into 1/4 inch slices.

Melt the butter in an oven-proof skillet over medium heat. Once melted, throw in your apple slices and allow them to cook for about 6 to 8 minutes until they’re soft.

Add in the brown sugar and cinnamon and continue cooking on medium heat for 2 to 3 minutes until they’re caramelized.  While they’re cooking, whisk together the eggs, milk, salt and flour. When the apples are lovely and soft, gently pour in your batter and move your skillet into the preheated oven for 12 minutes.

After 12 minutes, pull out the skillet and sprinkle the remaining 1/4 cup brown sugar over the top. Drizzle the maple syrup onto this lovely creation, sprinkle the pecans on top and return to the oven for approximately 5 minutes or until it’s all nice and brown.

Chocolate Peanut Butter Cup Madness – An Irresistible Dessert Recipe

Ingredients:

  • 1-1/2 cup of milk chocolate chips
  • 1 tablespoon butter
  • 1 bag of Oreos
  • 1 bag of mini peanut butter cups

Preparation:

Begin by removing one of the cookies from the Oreo, I used a knife and pried it off gently. Place 3 mini peanut butter cups evenly onto the oh-so good Oreo filling.

Berry Rhubarb No Bake Cheesecake Recipe

Last month I shared two recipes which use rhubarb, my Strawberry Rhubarb Lemonade and my Berry Rhubarb Parfait. Both of these are lovely recipes and today I’m continuing the theme with my Berry Rhubarb Cheesecake recipe. This recipe uses some of the same ingredients from my Berry Rhubarb Parfait, you simply later the cheesecake layer with the berry, rhubarb mixture to create a lovely dessert.

Berry Rhubarb Cheesecake Recipe

Berry Rhubarb Cheesecake Recipe PinterestIngredients:

  • 1 (8 ounce) package cream cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped
  • 2 cups Graham Cracker Crumbs
  • 6 Tbsp.  margarine, melted

Berry Rhubarb Mixture

  • 2 tablespoons butter
  • 1 teaspoon vanilla
  • 2 teaspoons honey
  • 3 stalks of rhubarb, peeled if needed and sliced thinly
  • 1 cup fresh blackberries
  • 1 cup fresh strawberries

Melt butter with honey and vanilla in a pan over medium heat. Once melted, add in your chopped rhubarb and allow to simmer for approximately 10 minutes.

Now add in the berries and simmer for 5 minutes so the berries become soft and release their juice. Once it reaches the desired texture, set aside to cool.

As the mixture simmers, you can prepare your cheesecake and graham mixtures. MIX graham crumbs and margarine and press a portion into the bottom of each cup.

Beat together the cream cheese, sugar, and vanilla until the mixture is smooth and spreadable. Whisk whipped cream into cream cheese mixture until smooth.

Place the cream cheese and berry/rhubarb mixtures in the fridge until cooled.

Layer each mixture into cups as you desire and serve.

My FAV Easy Strawberry Milkshake Recipe

We are all about easy recipes, and I’m excited to share my favorite EASY Strawberry Milkshake recipe. This week we have been at our trailer in Muskoka at MBC. I’ve posted loads about our life up here which you can read HERE. We live without a proper kitchen, to compound the space issue our 30 year old trailer doesn’t have propane so I cook using a hotplate, BBQ and other small electric appliances.

This is supposed to be “camping” and if my darling husband had his way we’d really be roughing it but personally I believe in eating well while camping. This week we made ourselves a treat after a friend dropped off some luscious strawberries she’d hand-picked for us and of course I had to share it here with you all!

  • 2 cups of strawberries
  • 1-1/2 cup milk
  • 2 cups french vanilla ice cream

Fresh strawberry milkshake

Preparation:

Begin by calling in recruits to help with washing and hulling the strawberries. Thankfully our friend who is Youth Counselor here stopped in to lend a hand.

Next cut each strawberry in half and puree in a blender.

Ice Cream, Ice Cream we all scream for Ice Cream! I adore ice cream and with my new KitchenAid Ice Cream Maker I was determined to make my inaugural batch. Off I went to Google, blogs and Pinterest to investigate how folks went about making ice cream. In the end I combined a few recipes, simply because I didn’t have all of the ingredients in the house and I wanted to get this ice cream made for my family. I also decided up on this recipe because it’s simple, there’s no cooking necessary for the base which eliminates some work.

I’m EXTREMELY happy with the results, this is a simple recipe which my family assures me tastes better than the Cookies & Cream ice cream we usually buy.

For this recipe I decided to make a little YouTube video, I really felt it would show how simple it is to make your own Cookies & Cream ice cream using the KitchenAid Ice Cream Maker attachment.   • 1 cup of milk (we had 2% in the house and it worked out well)
  • 2 cups heavy cream
  • 3/4 cup sugar
  • pinch of salt
  • 20 Oreo cookies

Preparation:

  1. Combine milk, sugar and salt in a bowl and whisk until sugar is fully dissolved.
  2. Add in cream and stir well.
  3. Cover and chill for at least 2 hours.
  4. Place 20 oreos into a bowl and use a potato masher to crush.
  5. Place the frozen ice cream maker bowl onto the mixer and set up the “dasher” as per manufacturer instructions.
  6. Pour your chilled mixture into the ice cream maker, set it to stir on a low setting and leave for 20 mins.
  7. Fold crushed cookies into the ice cream.
  8. Transfer ice cream into a sealable container and place in the freezer for 2-3 hours to set.

Watermelon Cake for Canada Day & 4th of July

My husband recently brought home a watermelon and instantly my mind went back to an image I’d seen on Pinterest of a watermelon cake. Pinterest is a BIG thing with me, I love to save the photos for future use and today I had the chance to use one of my Pins.

I did what any good Pinner should do, I went over to see the original blog which had posted the No Bake Watermelon Cake to see how to get this recipe off the ground. She had used her own whipped cream and I have a wonderful whipped cream recipe (posted within my Berry Rhubarb Parfait recipe) but I had 2 kids chomping at the bit this afternoon so decided to use the store-bought version in the fridge.

Festive Watermelon Cake for Canada Day & 4th of July

You’ll need a good sized watermelon.

Cut off each end of the watermelon.

You’ll be left with the center and now you cut off the skin and white bits. Whew all of this cutting is so much more simple when you recruit some help!

Watermelon Cake Remove Skin

Place your watermelon on it’s flat side and trim it until you’re happy with the shape. The kids loved helping me use up the leftover bits of watermelon, they’re also good to use in a drink like my Watermelon Lemonade.

At this point you may want to put your watermelon into the fridge, it really was a bit difficult to get the whipped cream to stick to the watermelon and chilling it helps. Cover the entire watermelon in whipped cream as if you’re icing a cake.

Now you simply add your choice of decorations. For my US July 4th cake I used blueberries and raspberries and for the Maple Leaf I used strawberries.
