Philly Swiss Steak Wrap – WIN 8 Dempster's Coupons #WrapItUp

As the Fall sets in our family just becomes busier. Somehow the lazy days of summer are gone and we’re suddenly on a timeline again. This means I need to be able to plan and get nutritious foods into the kids QUICKLY!

I often turn to wraps because our kids love them and it’s simpler to grab one on the run. Today I’m sharing my rendition of a Philly Swiss Steak Wrap which I made using Dempster’s wraps.

Ingredients:

  • Your favourite steak, already cooked and chopped into bite sized pieces
  • 7 slices of swiss cheese
  • 5 mushrooms, sliced
  • 1/2 red onion, diced
  • 1/2 cup butter
  • 1/2 cup heavy cream
  • 1 teaspoon coarse black pepper (or less if you prefer)
  • 4 Dempster’s wraps
  • Lettuce to garnish

Preparation:

Begin by sautéing your mushrooms and onion on medium-high heat until they are soft. Then add in the butter and once melted pour in the heavy cream and stir in the steak. Now break 3-5 pieces of swiss cheese into pieces and add into the mixture, stirring constantly until fully melted.

Allow to simmer for approximately 5 minutes until the sauce fully heats and thickens up. Place your wraps onto plates and spoon the gorgeous steak and sauce mixture onto each one. Top with a slice of swiss cheese and lettuce, roll and enjoy!

Quick, Easy Naan Pizza Recipe #shop #cbias

September is just around the corner which for many of us means a busier lifestyle. During September my girls head back to school and all of their extra-curricular activities and sports begin. This means that our evenings are often rushed and we’re stretched somewhat thin at times. With the craziness which I know is ahead I’m arming myself with quick, nutritious recipes which I can make quickly on these hectic nights.

Thankfully there are many products in the supermarkets which help me to be prepared, one is the Maple Leaf Meals Made Easy Line. I know that Maple Leaf is dedicated to food quality which gives me confidence that these aren’t just great-tasting items but are nutritious as well.

One of our favourite quick meals are Naan Pizzas, they take only 15 minutes to prepare and the girls love them. This week we had a busy evening so I headed out to our local Zehrs to pick up my supplies to make this Naan Pizza recipe.

Our local Zehrs is gorgeous, with a HUGE selection of locally grown fresh produce, the Joe Fresh department, the gigantic cheese aisle….well I’m sure you can understand why I may have been “lost” in there for quite some time.

After receiving a phone call from home asking me if I ever planned on returning I figured it was time to get back to my actual shopping list. I found all of the produce, sauces and naan bread then headed to the Ready To Eat area to pick up the Maple Leaf Prime Chicken strips I was looking for.

I may have made another pit stop along the way in the Joe Fresh department but hey every girl deserves a lovely new scarf now and again.

Supplies in hand I headed home and prepared our dinner using the Naan Pizza recipe below. I hope your family will enjoy it as much as ours does, it’s super simple to customize it to each person’s taste and takes very little time.

Quick, Easy Naan Pizza Recipe

For this recipe I’m going to offer up two different kinds of Naan Pizza, this is because my daughters don’t care for pesto quite as much as I do so why not show you how I did it? The two kinds are:

Chicken Pesto Naan Pizza

&

Chicken Tomato Naan Pizza

Ingredients:

  • 4 tablespoons pesto or tomato sauce
  • 1/1-3 cups shredded Mozzarella or Feta cheese
  • 1 pkg Maple Leaf Prime Chicken Strips
  • 1/4 cup tomatoes, diced
  • 1/4 chopped kielbasa
  • 4 Naan bread

Preparation:

Assemble your ingredients.

Spread 2 tsp (10 mL) of pesto or tomato sauce on each naan bread.

Chop the Prime chicken into smaller pieces.

Crescent Roll Tacos Recipe – Utterly Delicious

Our little family of 4 has always enjoyed tacos until recently my youngest suddenly announced she “HATES” tacos. Cue the collective GASP as I sniff back a tear and put my favourite stand-by taco recipe into the do not use pile. Honestly I hadn’t realized this would be such a pain in the tush until my eldest was begging for tacos and Chelsea was adamant that she won’t eat them….a quandry which I hadn’t solved until I saw an image on Facebook for what looked to be a Crescent Roll Tacos Recipe.

I decided to try and recreate my own recipe, figuring the worst case scenario would have me driving for take out if it was a flop.

In the end it was a huge hit! Everyone enjoyed this crescent roll taco dish, even my father asked for seconds!

Ingredients:

  • 2 crescent roll tubes
  • 1 LB ground beef
  • 1 packet of taco seasoning
  • 1 1/2 cups grated cheddar or mozzarella cheese
  • Shredded lettuce
  • 1 or 2 diced tomatoes depending on size
  • Sour cream optional

Preparation:

Lay out the two tubes of crescent pastry in a circle,  with triangle bases on the inside of the circle. Place left over crescent rolls as the centre.

Swimming and an Easy Chicken Recipe ~ Chicken Quesadilla #ChickenDotCA

This week our family is doing what we do all summer, spending the days in the water. All of this fabulous activity means the family is STARVING by lunch and I am constantly on the hunt for interesting, healthy choices. One of our favourites is an easy chicken recipe, Chicken Quesadilla which I make with dark meat. I am proud to be the Health Ambassador for Chicken Farmers of Canada and I feel I must remind every one of the benefits of dark chicken meat.

With the focus upon weight loss in recent years, many folks are choosing white meat and forgetting the benefits of dark chicken meat. Chicken Farmers of Canada has a Health portal where you can find information on the benefits of chicken to your health, this is where I turn to for my information.

Dark meat is richer in nutrients than white meat and contains more iron and zinc. Zinc is a trace mineral that is found in every cell of your body and is necessary for growth and reproduction. It also supports immunity, wound healing and helps maintain your sense of taste and smell. The best sources of zinc are foods of animal origin such as poultry, meat, liver and seafood. Dark meat is also rich in vitamins A, K, B6, B12, niacin, folic acid, pantothenic acid and minerals like selenium and phosphorus.

When planning your summer meals, don’t forget to choose dark chicken meat which provides so many nutrients we need. Now back to summer talk!

Swimming in Muskoka

The kids love swimming and thankfully it means they’re active all day long. Over the years I’ve had the pleasure of watching my girls go from a fear of the water to diving in at a run. We have taught them the how to swim, but also the importance of water safety from a very young age.

Being active over the Summer months is important, not only to wear out my easily-bored girls but to keep them healthy. We happen to have a trailer near a lake and pool in the backyard but each community has public pools or conservation areas nearby, go check them out for an inexpensive way to keep your kids moving!

Chicken Quesadilla – An Easy Chicken Recipe

Ingredients:

  • 6 Chicken Thighs
  • 1 green pepper, chopped finely
  • 1/2 onion chopped finely
  • 10 flour tortillas
  • 2 cups grated cheese
  • 1 Tablespoon oil
  • Your choice of spices – We used Club House Fiery Habanero & Roasted Garlic spice

Preparation:

Pre-heat your grill to a medium-high heat. Place chicken thighs onto grill and cook until fully cooked.

Place oil into cast iron skillet and put onto the BBQ to heat. Next chop up your cooked chicken, green peppers, onion and place in a skillet on the grill to brown.

Now simply place a tortilla wrap directly onto the grill, scatter grated cheese over it and add your chicken mixture. Cover with a 2nd tortilla wrap and close BBQ lid.

Leave it to grill on low heat until the cheese is melted and the top tortilla sticks. Once ready, flip and grill the other side for 5 more minutes, until the tortilla is toasted.

Now simply cut into triangles and serve with your choice of salsa (my homemade Salsa recipe would be delicious) and sour cream.

Simple Summer Quiche Recipe

A crowd favourite during summer gatherings around here has always been Quiche. There are millions variations on the standard Quiche recipe but today I’m sharing with you my simple answer which can be whipped up in minutes!

This recipe begins with a pre-made pie crust, while some of you may be gasping in horror we all know that it’s a time saver and in these summer months when the kiddos are home I’m often glad for quick options. I keep a few pre-made crusts in the fridge and as long as I have eggs and cheese I can make up a Quiche at any time.

This recipe is somewhat traditional, I’m using onions, ham, mushroom, cheddar cheese and red peppers. It’s a simple Summer Quiche recipe which can be made ahead and stored in the fridge until guests arrive.

Ingredients:

  • 9 inch pre-made pie crust
  • 5 eggs
  • 1 cup milk (or cream if you prefer)
  • 1 cup ham, cubed
  • 1 cup mushroom
  • 1/2 cup chopped onion
  • 1/4 cup chives, chopped
  • 1/4 cup chopped red pepper
  • 1 tablespoon oil
  • 1 cup cheddar cheese
  • Salt & Pepper to taste

Turn on your oven to pre-heat to 400 degrees. Sauté the diced ham, chopped onions, red peppers and onions in the oil until they’re golden.

No-Beer Can Chicken – Easy Chicken Recipe

Once again I was on the hunt for an easy chicken recipe and hit the internet for help. Between Google and Pinterest I had plenty of options but it was quickly apparent that Beer Can Chicken hit the top of the list for many people.

This is a recipe which has always intrigued me, put beer and chicken in the title together and it’s sure to draw me in. Alas, my days of ingesting any type of alcohol are long gone (thank goodness) and while I am aware that usually alcohol cooks off during the process, for me it’s not an option.

What is someone who chooses to avoid alcohol to do when they find a recipe they want to try but it has alcohol in it? Why they could access my Alcohol Substitution Chart for Cooking to see what options they can use to replace the alcohol. Handy eh?

I decided to give the recipe a whirl. After reading many recipes I realized that the rub was the important bit when it came to flavour. Substituting the beer would be simple, I could half fill a mason jar with chicken stock or choose a lemon based soda to achieve the same moist result.

Ingredients:

  • 1 4-pound whole chicken
  • 2 Tbsp olive oil or vegetable oil
  • 1 opened, half-full can lemon lime soda (or mason jar half-filled with chicken stock)
  • half of a lemon, sliced
  • half of a lime, sliced
  • 3 tablespoons of your favorite dry spice rub

For our rub we used:

  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 2 Tablespoons poultry spice (or your fav chicken seasoning)
  • 2 Tablespoons Club House Montreal Chicken

Preparation:

This chicken is cooked with indirect heat (no coals or burners on directly under the bird). This means that you’ll turn your BBQ onto medium-high heat but leave the area where the chicken will cook off. If you have a charcoal grill, just put the coals on the other side and if using gas, leave some burners turned off.

Now you’ll prepare the chicken; remove giblets and neck from the cavity of the chicken if they’re in there. Next rinse the bird and pat dry with paper towel, if the skin is moist it won’t go crispy.

Mix your rub ingredients together and massage the oil into the chicken.

Next rub your spices all over the bird, ensure you get into the folds and cavity.

Now take slices of lemon and lime and place them into the chicken’s cavity, don’t over-stuff or the can will not fit in.

Place your 1/2 can of soda onto a flat surface and plonk the chicken onto it, this may take a bit of effort but lower the chicken until the can is half-way into the chicken’s cavity.

Holding the can in place, move the chicken onto the cooler side of the grill. Carefully place it so that the can sits stably and the legs work like a tripod.

Close the lid and allow it to cook for about 1-1/4 hours or until the internal temperature is 165 degrees F in the breast area and 180 degrees F in the thigh.

When you remove the chicken from the grill, remember that the can is HOT. We used tongs under the wings and a spatula to hold the can. Simply slide the can out of the bird and serve!

Summer Chicken Burgers Recipe & Giveaway #BreakUpWithGroundBeef

Nothing says Summer quite like Chicken Burgers on the grill! Today I’m bringing a very special recipe, not only because it’s delicious but because I’m going head to head with Stacey from ThisLilPiglet who is also developing a Chicken Burger recipe.

Here’s the deal, Stacey and I are using the Nacho Chicken Burger from Maple Leaf Prime as our inspiration to develop our own burger and go head to head. We are both sharing our recipes today, showing how diverse ground chicken can be!

There are some ingredients which simply SCREAM Summer to me; feta cheese, sun-dried tomato, corn…oh my goodness yes please!

Summer Chicken Burgers

Ingredients:

  • 2 large Cloves garlic, minced
  • ½ cup sun-dried tomato, minced
  • 1 tsp cayenne pepper
  • Salt & pepper, to taste
  • 2 lb (2 packages) Maple Leaf Prime Naturally® Extra Lean Ground Chicken
  • ½ cup onion & garlic croutons, as breadcrumbs
  • 2 Eggs
  • 1/2 cup crumbled Feta cheese
  • 8 hamburger buns, split
  • Mixed greens (Arugula, lettuce)
  • Salsa (recipe below)
  • Guacamole (recipe below)

Preparation:

Begin by mincing the sun-dried tomatoes and garlic. I decided to do all of my preparation on the deck by the pool and used my KitchenAid hand blender which is my new love!

Place the Maple Leaf Prime ground chicken into a bowl with 2 eggs, the sun-dried tomato/garlic, cayenne pepper, salt, pepper and ground onion & garlic croutons (grind with hand blender).

Now it’s time to take off your rings and get your hands into the bowl. Kneed the ingredients until they are well blended and the mixture sticks together. The more you work it the more moisture will be removed from the chicken so be gentle.

Once you are satisfied with the consistency, use your hands or a burger press to form into 8 burgers.

Place your burger patties on a grill which is preheated at medium heat.

Cook for 4 minutes a side, flipping twice on each side or internal temperature has reached a minimum of 165˚F (74˚C). Then top with selected cheese and allow it to melt to your taste.

Serve on your favorite bun and top with my homemade Salsa and Guacamole!

Salsa Recipe

Salsa Ingredients:

  • 1/2 onion
  • 2 cloves garlic
  • 1/2 red pepper
  • 1/2 orange pepper
  • 1 cup canned tomatoes, drained
  • 1/2 cup corn
  • 1 tablespoon lime juice
  • Tabasco to taste
  • 1 teaspoon chili powder
  • 1 tsp crushed chillies

Preparation:

  • Avocado the onion, garlic and peppers into a blender and mince.
  • Add in tomatoes and blend again.
  • Transfer mixture into a bowl and adding remaining ingredients and combine.

Guacamole Recipe

Ingredients:

  • 1 avocado
  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 2 garlic cloves, minced

Preparation:

Mince avocado and garlic in a blender until smooth then combine with remaining ingredients.

Easy Chicken Recipe – Bacon Wrapped Roasted Red Pepper Stuffed Chicken

If you’re on the hunt for a delicious, easy chicken recipe this Bacon-Wrapped Chicken stuffed with roasted red pepper cream cheese is a great choice. It’s full of flavour and is oh-so-pretty on the plate!

Our family eats chicken multiple times a week and I’m always searching out new recipes or ideas. One of my stand-by recipes is Pesto Stuffed Chicken Breast but apparently I’ve been making it too often because the kids were beginning to rebel. I had pulled out 2 chicken breasts and was determined to use them so I scoured the pantry and fridge and came up with the recipe below.

Thankfully I had cream cheese in the fridge so I used 2 oz of it softened and added 1/4 cup of ground Roasted Red Pepper flakes and finally chopped up 1 very large garlic clove and mixed them well.

Now take 6 large pieces of bacon and place them in a pan on medium heat to pre-cook until they’re half done.

The next step isn’t as pleasant, simply because I am really grossed out by touching raw meat. I took the 2 chicken breasts, filleted them off the bone and pounded them flat to about 1/4 of an inch thick. Once you’re happy with the thickness, spread 1/2 of your cream cheese mixture on each breast. Top with a sprinkling of parmesan and Asiago cheeses.

By now your bacon should be cooked, it should be limp and not yet crispy. If you are someone who loves your bacon super-crispy you may choose to pre-cook your bacon a bit longer. Place your bacon onto paper towel and pat off excess grease.

Once again you’re going to have to touch the raw chicken (am I the only person who cringes for this?).

Wrap your chicken breasts into rolls, tuck in the ends and secure with a skewer lengthwise down the middle. Next you’ll take your pieces of bacon and wrap around the chicken rolls and secure with toothpicks (or pieces of skewers if you don’t have toothpicks).

Place on a baking sheet and cook in an oven pre-heated to 375 degrees for 30-35 minutes or until the chicken is fully cooked.

Remove all of the skewers/toothpicks, slice and serve!

Bacon Wrapped Roasted Red Pepper Stuffed Chicken

Ingredients:

  • 2 chicken breasts – bone and skin removed
  • 2 – 3 oz cream cheese (depending on size of chicken breast)
  • Roasted Red Pepper Flakes – crushed
  • 1 very large garlic clove (or 2 regular sized)
  • 6 slices of bacon (more if you prefer more coverage)
  • toothpicks and skewers

Preparation:

  • Combine 2 tablespoons of softened cream cheese with 1/4 cup of ground Roasted Red Pepper flakes and chopped garlic
  • Place bacon into pan on medium heat to pre-cook until half done
  • Flatten chicken breasts to about 1/4 of an inch thick and spread 1/2 cream cheese mixture on each breast. Top with a sprinkling of parmesan and Asiago cheeses.
  • Remove half-cooked bacon from pan and use paper towel to remove excess grease
  • Wrap chicken breasts into rolls, tuck in the ends and secure with a skewer lengthwise down the middle.
  • Wrap bacon around the chicken rolls and secure with toothpicks (or pieces of skewers if you don’t have toothpicks).
  • Place on a baking sheet and cook in an oven pre-heated to 375 degrees for 30-35 minutes or until the chicken is fully cooked.

An Easy Chicken Recipe which uses bacon and a roasted red pepper cream cheese filling
Ingredients
  • 2 chicken breasts – bone and skin removed
  • 2 – 3 oz cream cheese (depending on size of chicken breast)
  • Roasted Red Pepper Flakes – crushed
  • 1 very large garlic clove (or 2 regular sized)
  • 6 slices of bacon (more if you prefer more coverage)

  1. Combine 2 tablespoons of softened cream cheese with 1/4 cup of ground Roasted Red Pepper flakes and chopped garlic
  2. Place bacon into pan on medium heat to pre-cook until half done

Pesto Stuffed Chicken Breast Recipe

So many of us are looking for simple, delicious yet healthy meals to serve our families and are often finding that recipes are complicated or lengthy. Here is my super-simple Pesto Stuffed Chicken Breast recipe which you’ll find takes very little time and honestly is divine.

Begin by pouring your drink of choice, then begin by de-boning and slicing a chicken breast in half to make a fillet.

At this point I flattened the breast and brushed on a generous layer of pesto and made a little pile of red pepper slices and a blend of romano, parmesan and asiago cheeses in the middle of the breast.

Carefully roll the breast around the pile, this is messy but do your best to keep the ingredients in the center.

Next wrap your chicken breast in pieces of prosciutto until the whole breast is covered and skewer to hold it together.

Place on your BBQ at medium heat and cook for 4 minutes.

 Flip and repeat three more times, for a total of 20 minutes on the BBQ.

Slice the stuffed chicken breast and serve! Yes it’s really that simple!

Prosciutto, Pesto Pizza Recipe #LMDConnector

My daughters and I are currently staying at our trailer in beautiful Muskoka, Ontario. The girls spend their days in kids programs and this week it was the “Olympics” program. It was seriously cute to see my girls arrive home at lunch exhausted and starving from all of the exercise and fresh air.

We do not have propane for our trailer which means I have to be quite creative, I use the BBQ, an electric skillet and a toaster for most of my meals. This week I’ve been serving the girls a favorite which they love, it’s a Prosciutto, Pesto Pizza made on the BBQ.

I’m all about an easy meal plan, thankfully this is a FAB option but if you’re looking for other ideas go check out the recipe section on the Life Made Delicious website where you’ll find plenty.

Prosciutto, Pesto Pizza

Ingredients

  • Pizza Recipe1 pre-cooked chicken breast – chopped finely.
  • handful of cherry tomatoes which you will dice.
  • 4 oz Alfredo sauce
  • 3 oz Pesto
  • 1 cup shredded cilantro
  • 3 cups shredded mozzarella cheese
  • 1 Pizza crust (I used pre-made)
  • 3 oz package of prosciutto

Pesto Pizza

Sauce Preparation

Combine Alfredo sauce, Pesto, shredded cilantro, diced tomatoes and chicken

 

Spread the sauce mixture generously over the pizza crust

 

Cook Pizza on BBQ

Cover the sauce with shredded mozzarella cheese and place on the BBQ (preheated on Medium heat), close BBQ lid and leave it for approx 20 minutes until cheese is bubbling and bottom of crust is golden brown.

Remove from the grill and cut into desired pieces. Put a rolled prosciutto slice on each serving with a 1/2 of a cherry tomato.

Other delicious toppings to add if you’d like are 1 cup cilantro and 1/2 cup crumbled Feta.
